  • 4 cups Fresh Spinach
  • 6 Large Eggs
  • 1 cup Shredded Cheese (sharp cheddar or mozzarella)
  • 1 Onion (finely diced)
  • 2 cloves Garlic (minced)
  • 1/2 cup Milk or Cream (whole milk or half-and-half)
  • Salt (to taste)
  • Pepper (to taste)
  • Pinch of Nutmeg

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9-inch pie plate or an 8×8 inch baking dish with butter or cooking spray.
  2. In a medium skillet, heat a tablespoon of olive oil or butter over medium heat. Add the finely diced onion and sauté for about 5-7 minutes until softened and translucent. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the fresh spinach to the skillet and cook until wilted, then transfer to a colander to cool. Squeeze out as much excess water as possible from the spinach.
  4. In a large mixing bowl, whisk the large eggs until well beaten. Add the drained cottage cheese, milk or half-and-half, salt, pepper, and a pinch of nutmeg, whisking until well combined.
  5. Add the squeezed spinach, sautéed onion and garlic, and shredded cheese to the egg mixture. Stir gently until all ingredients are evenly distributed.
  6. Pour the quiche mixture into the prepared pie plate or baking dish and tap gently on the counter to settle the mixture.
  7. Bake for about 40-50 minutes until the center is set and a knife inserted comes out clean. The top should be golden brown.
  8. Let the quiche cool on a wire rack for at least 10-15 minutes before slicing and serving.
