Ingredients
-
8 oz wide rice noodles (or lo mein, udon, or spaghetti)
-
1 lb flank steak or sirloin, thinly sliced against the grain
-
1 tbsp cornstarch
-
1 tbsp vegetable oil
-
2 cloves garlic, minced
-
3 green onions, sliced (separate white and green parts)
-
¼ cup hoisin sauce
-
1 tbsp soy sauce
-
1 tbsp oyster sauce
-
1 tsp sesame oil
-
1 tsp rice vinegar
-
Optional: red pepper flakes or sriracha for heat
-
Sesame seeds + green onion tops for garnish
Instructions
-
Cook the Noodles: Bring a pot of water to a boil and cook noodles according to package instructions. Drain, toss with a little sesame oil, and set aside.
-
Prep & Cook the Beef: Toss sliced beef with cornstarch and a pinch of salt. Heat vegetable oil in a large skillet over medium-high heat. Add beef in a single layer and cook 2–3 minutes per side until browned. Remove and set aside.
-
Make the Sauce: In the same skillet, add a touch more oil if needed. Sauté garlic and the white parts of the green onions for 30 seconds. Add hoisin, soy sauce, oyster sauce, sesame oil, vinegar, and chili flakes or sriracha if using. Stir and let bubble for 1–2 minutes.
-
Combine: Return the beef and noodles to the skillet. Toss everything together until evenly coated and heated through. Garnish with sesame seeds and green onion tops. Serve hot and slurpy!
Notes
-
Slice your beef very thinly across the grain for the best texture.
-
For extra veggies, toss in bell peppers, shredded carrots, or baby spinach.
-
Want a saucier finish? Add a splash of noodle water or broth before tossing.
-
Leftovers reheat beautifully in a skillet with a little splash of water.
-
Great for meal prep—just keep sauce separate until reheating for best texture!
