Instructions
- Prepare the Apples: Wash your apples thoroughly, peel, core, and chop them into roughly 1-inch pieces.
- Initial Cook: Place the chopped apples into a large pot or Dutch oven. Add the apple cider (or water), ground cinnamon, and whole spices (cinnamon sticks and whole cloves). Stir everything together.
- Simmer to Soften: Bring the mixture to a gentle boil over medium-high heat, then reduce the heat to low, cover the pot, and let it simmer for about 20-30 minutes, stirring occasionally, until the apples are very soft.
- Blend for Smoothness: Remove the pot from the heat and carefully remove the whole cinnamon sticks and cloves. Use an immersion blender or transfer the mixture to a blender to blend until smooth.
- Add Sweetener and Reduce: Return the pureed apple mixture to the pot and stir in your chosen sweetener(s). Adjust the sweetness to your liking and bring the mixture back to a gentle simmer over low heat.
- Slow Reduction: Let the apple butter simmer slowly for 1 to 3 hours, stirring frequently, until it thickens and darkens in color.
- Test for Doneness: Spoon a small amount onto a chilled plate to check if it mounds and doesn’t release watery liquid. If it holds a line when stirred, it’s done.
- Final Touches: Once it reaches your desired consistency, remove it from the heat and adjust any spices or sweetness if needed.
