  • Author: cooktrove
  • Total Time: 6 minute
  • Yield: Varies based on apples used

Description

This homemade apple butter is a rich, velvety spread infused with warm spices, perfect for toast or as a glaze for savory dishes. Experience the comforting aroma of autumn with every bite.

Ingredients

Scale
  • 34 pounds of apples (mix of sweet and tart varieties like Fuji, Gala, Honeycrisp, Golden Delicious, Granny Smith, or Braeburn)
  • 1/2 to 1 cup of brown sugar
  • A touch of molasses or maple syrup (optional)
  • 12 teaspoons of ground cinnamon
  • 23 cinnamon sticks
  • 1015 whole cloves
  • 1/2 to 1 cup of unsweetened apple cider or water
  • Optional spices: pinch of freshly grated nutmeg, dash of allspice, or small piece of fresh ginger

Instructions

  1. Prepare the Apples: Wash your apples thoroughly, peel, core, and chop them into roughly 1-inch pieces.
  2. Initial Cook: Place the chopped apples into a large pot or Dutch oven. Add the apple cider (or water), ground cinnamon, and whole spices (cinnamon sticks and whole cloves). Stir everything together.
  3. Simmer to Soften: Bring the mixture to a gentle boil over medium-high heat, then reduce the heat to low, cover the pot, and let it simmer for about 20-30 minutes, stirring occasionally, until the apples are very soft.
  4. Blend for Smoothness: Remove the pot from the heat and carefully remove the whole cinnamon sticks and cloves. Use an immersion blender or transfer the mixture to a blender to blend until smooth.
  5. Add Sweetener and Reduce: Return the pureed apple mixture to the pot and stir in your chosen sweetener(s). Adjust the sweetness to your liking and bring the mixture back to a gentle simmer over low heat.
  6. Slow Reduction: Let the apple butter simmer slowly for 1 to 3 hours, stirring frequently, until it thickens and darkens in color.
  7. Test for Doneness: Spoon a small amount onto a chilled plate to check if it mounds and doesn’t release watery liquid. If it holds a line when stirred, it’s done.
  8. Final Touches: Once it reaches your desired consistency, remove it from the heat and adjust any spices or sweetness if needed.
