  • 56 tablespoons All-Purpose Flour (Mąka Pszenna)
  • 1 medium-sized Egg (Jajko)
  • 1 teaspoon Baking Powder (Proszek do Pieczenia)
  • 1/4 teaspoon Salt (Sól)
  • Tomato Sauce (Sos Pomidorowy)
  • 100150g Shredded Cheese (Ser Żółty)
  • Cooked Beef (optional)
  • Sliced fresh Mushrooms
  • Finely diced Bell Peppers
  • Thinly sliced Red Onion or finely chopped White Onion
  • Sliced black or green Olives
  • Sweet Corn kernels
  • Fresh Basil or Oregano leaves

Instructions

  1. Preheat your oven to 200°C (390°F) and line a large baking sheet with parchment paper.
  2. In a medium-sized bowl, combine the cottage cheese, egg, and salt. Mix thoroughly until well combined.
  3. Add the baking powder and 5 tablespoons of flour to the wet mixture. Mix until you achieve a soft, slightly sticky dough. If too wet, add more flour one teaspoon at a time.
  4. Using a tablespoon or small ice cream scoop, portion out spoonfuls of the mixture onto the prepared baking sheet, aiming for 12-15 mini pizzerinki. Flatten each portion into a small disc, about 2.5 to 3 inches in diameter.
  5. Spread a thin layer of tomato sauce over each base. Distribute your chosen toppings evenly, and sprinkle shredded cheese on top.
  6. Bake in the preheated oven for approximately 15-20 minutes until the edges are golden brown and the cheese is bubbly.
  7. Remove from the oven and let cool for a minute before transferring to a serving platter. Serve warm, garnished with fresh basil or a drizzle of olive oil.
