- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup heavy cream
- 2 cups all-purpose flour

- additional granulated sugar for topping
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, beat together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
- Incorporate the egg and vanilla extract into the butter mixture and beat until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients and stir until just combined.
- Gently fold in the heavy cream until the dough is soft and slightly sticky.
- Using a cookie scoop or your hands, portion out the dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each dough ball slightly with your fingers.
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden but the centers are still soft. Remove from the oven and let them cool on the baking sheet for a few minutes.
- Once the cookies have cooled slightly, sprinkle a thin layer of granulated sugar on top of each cookie.
- Using a kitchen torch, carefully melt the sugar until it forms a crispy, caramelized layer. If you don’t have a torch, place the cookies under the broiler for a minute or two, keeping a close eye to avoid burning.
