  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 minced garlic clove
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 diced onion
  • 23 minced garlic cloves
  • 6 cups chicken broth
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup heavy cream
  • 2 cups fresh spinach or kale

Instructions

  1. In a large bowl, combine 1 pound of ground beef, 1/2 cup of breadcrumbs, 1/4 cup of grated Parmesan cheese, 1 tablespoon of Italian seasoning, 1 minced garlic clove, and salt and pepper to taste. Mix well and form into small meatballs, about 1 inch in diameter.
  2. In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the meatballs in batches, browning them on all sides, about 5-7 minutes. Once browned, remove them from the pot and set aside.
  3. In the same pot, add another tablespoon of olive oil if necessary, then add 1 diced onion and cook until translucent. Stir in 2-3 minced garlic cloves and cook for another minute until fragrant.
  4. Pour in 6 cups of chicken broth and bring it to a simmer. Add 1 cup of diced tomatoes along with the meatballs back to the pot.
  5. Allow the soup to cook for about 15-20 minutes, letting all the flavors meld together.
  6. Stir in 1 cup of heavy cream, and add 2 cups of fresh spinach or kale. Simmer for an additional 5 minutes until the greens are wilted and the soup is heated through.
  7. Taste the soup and adjust the seasoning with salt and pepper as needed. Ladle into bowls and top with extra grated Parmesan if desired.
