Instructions
- Preheat the oven to 160°C (320°F).
- Cut the beef into large chunks (about 2-3 inches) and season generously with salt and pepper.
- In a large, oven-safe pot or Dutch oven, heat some oil over medium-high heat. Add the beef chunks in batches, searing them on all sides until browned, about 5-7 minutes per batch. Remove the beef and set it aside.

- Return the beef to the pot. Add chopped carrots, potatoes, tomato paste, herbs, and your choice of broth and non-alcoholic wine or grape juice. Stir everything together until well combined.
