  • 1 lb large shrimp, peeled and deveined

  • Salt and pepper, to taste

  • 1 cup orzo pasta, uncooked

  • 3 tbsp unsalted butter, divided

  • 3 cloves garlic, minced

  • Zest and juice of 1 lemon

  • 2 ½ cups chicken or seafood broth

  • ¼ cup grated parmesan cheese

  • 2 tbsp chopped fresh parsley

  • Optional: pinch of red pepper flakes, white wine splash, or extra lemon wedges for serving


Instructions

  • Cook the Shrimp: Season shrimp with salt and pepper. In a large skillet, melt 1 tbsp butter over medium heat. Add shrimp and cook 1–2 minutes per side until pink and opaque. Remove from pan and set aside.

  • Sauté Garlic and Toast Orzo: Add remaining 2 tbsp butter to the skillet. Stir in garlic and cook for 30 seconds. Add orzo and toast for 1–2 minutes until lightly golden.

  • Simmer Orzo: Pour in broth and lemon zest. Bring to a boil, then reduce heat and simmer uncovered for 8–10 minutes, stirring occasionally, until orzo is tender and most of the liquid has been absorbed.

 

  • Finish the Dish: Stir in lemon juice, parmesan, and parsley. Return shrimp to the skillet and toss everything gently to combine. Taste and season with more salt, pepper, or lemon juice if needed. Serve hot!

Notes

  • Use raw, uncooked shrimp for the best flavor and texture

  • Stir the orzo frequently during cooking so it doesn’t stick

  • Want it creamier? Add a splash of heavy cream at the end

  • Don’t overcook the shrimp—they should be just barely pink
