Instructions

  1. In a medium saucepan, combine the apricot preserves, white vinegar, soy sauce, granulated sugar, garlic powder, ginger powder, and optional onion powder. Stir with a whisk until the sugar begins to dissolve and all ingredients are well mixed. Add about 1/4 cup of cold water to help thin things out.
  2. Place the saucepan over medium heat. Bring the mixture to a gentle simmer, stirring occasionally. Let it simmer for about 5-7 minutes to allow the flavors to meld and the preserves to break down.
  3. Carefully taste the simmering sauce and adjust sweetness and tanginess as needed. Add more sugar for sweetness, a splash more vinegar for tang, or extra ginger/garlic powder if desired.
  4. In a small bowl, whisk together the cornstarch with the remaining 2 tablespoons of cold water until a smooth slurry forms.
  5. Slowly pour the cornstarch slurry into the saucepan while continuously whisking. Keep whisking for 1-2 minutes as the sauce thickens. If desired, whisk in 1-2 drops of yellow food coloring.
  6. Remove the saucepan from heat and let the sauce cool completely to room temperature before serving or storing.
