Instructions
- Prep Your Ingredients: Slice your beef kielbasa, chop your onion and bell pepper, and mince your garlic.
- Brown the Kielbasa: Heat a tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced beef kielbasa and cook for about 3-5 minutes until browned. Remove the kielbasa and set aside.
- Sauté the Aromatics and Veggies: Reduce heat to medium. Add the chopped onion and bell pepper to the skillet and cook for 5-7 minutes until softened. Add minced garlic and Italian seasoning, cooking for another minute.
- Build the Sauce and Cook the Gnocchi: Pour in the diced tomatoes and chicken or beef broth. Stir and bring to a gentle simmer. Add the gnocchi and simmer for 3-5 minutes until tender.

Keywords: Don't overcook the gnocchi; they cook quickly. You can enhance flavor with tomato paste or smoked paprika. For a creamier sauce, add heavy cream or cream cheese at the end.
