Ingredients

Scale
  • 1 cup of graham cracker crumbs
  • 1/2 cup of unsweetened cocoa powder
  • 1/2 cup of granulated sugar
  • 1/2 cup of unsalted butter, melted
  • 1/4 teaspoon of salt
  • 1 (8 oz) package of cream cheese, softened
  • 1/2 cup of powdered sugar
  • 1 teaspoon of vanilla extract
  • 1 cup of heavy whipping cream
  • 1/2 cup of chocolate chips (optional, for topping)

Instructions

  1. In a large mixing bowl, combine the graham cracker crumbs, unsweetened cocoa powder, granulated sugar, and salt. Stir until well mixed.
  2. Pour in the melted unsalted butter and mix until the mixture resembles wet sand and holds together when pressed.
  3. Line an 8×8 inch baking dish with parchment paper, leaving overhang for easy removal.
  4. Press the brownie mixture firmly into the bottom of the prepared baking dish, ensuring it’s evenly distributed and compacted.
  5. Chill the baking dish in the refrigerator while preparing the cheesecake layer.
  6. In a medium mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy (about 2-3 minutes).
  7. Gradually add the powdered sugar and vanilla extract, mixing until well combined and smooth.
  8. In a separate bowl, whip the heavy cream until stiff peaks form (about 3-5 minutes on high speed).
  9. Gently fold the whipped cream into the cream cheese mixture until just combined.
  10. Remove the brownie base from the refrigerator and spread the cheesecake mixture evenly over it.
  11. If using, sprinkle chocolate chips on top of the cheesecake layer.
  12. Cover the baking dish with plastic wrap or aluminum foil and return it to the refrigerator. Chill for at least 4 hours or overnight.
  13. Once set, lift the brownies out of the baking dish using the parchment paper.
  14. Place on a cutting board and cut into squares, wiping the knife with a damp cloth between cuts for cleaner edges.
  15. Serve chilled and enjoy!

Notes

  • For a fruity twist, consider adding a layer of fruit preserves or fresh berries between the brownie and cheesecake layers.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 5 days or frozen for up to 2 months.
