- 1 whole chicken (about 4–5 pounds)
- 2 oranges, zested and juiced
- 2 lemons, zested and juiced
- 1 lime, zested and juiced
- 4 cloves of garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 onion, quartered
- 1 cup chicken broth
- Fresh herbs for garnish (optional)
Instructions
- In a medium bowl, combine the zest and juice of the oranges, lemons, and lime.
- Add the minced garlic, chopped rosemary, and thyme to the bowl.
- Drizzle in the olive oil and mix until well combined.
- Season the marinade with salt and pepper to taste.
- Pat the whole chicken dry with paper towels.
- Place the chicken in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is thoroughly coated.
- Refrigerate the chicken for at least 2 hours, or overnight for best results.
- Preheat your oven to 425°F (220°C).
- Remove the chicken from the refrigerator and let it sit at room temperature for about 30 minutes.
- Quarter the onion and set it aside.
- In a large roasting pan, place the quartered onion in the center.
- Carefully place the marinated chicken on top of the onion and pour any remaining marinade over it.
- Pour the chicken broth into the bottom of the roasting pan.
- Roast the chicken for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
- Baste the chicken with the pan juices halfway through roasting.
- Once done, remove the chicken from the oven and let it rest for 15-20 minutes.
- Transfer the chicken to a cutting board and carve into pieces.
- Arrange the carved chicken on a serving platter and drizzle with pan juices.
- Garnish with fresh herbs if desired.
- (Optional) To make a sauce, place the roasting pan on the stovetop over medium heat and scrape up any browned bits with a wooden spoon.
