  • 1 whole chicken (about 45 pounds)
  • 2 oranges, zested and juiced
  • 2 lemons, zested and juiced
  • 1 lime, zested and juiced
  • 4 cloves of garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 onion, quartered
  • 1 cup chicken broth
  • Fresh herbs for garnish (optional)

Instructions

  1. In a medium bowl, combine the zest and juice of the oranges, lemons, and lime.
  2. Add the minced garlic, chopped rosemary, and thyme to the bowl.
  3. Drizzle in the olive oil and mix until well combined.
  4. Season the marinade with salt and pepper to taste.
  5. Pat the whole chicken dry with paper towels.
  6. Place the chicken in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is thoroughly coated.
  7. Refrigerate the chicken for at least 2 hours, or overnight for best results.
  8. Preheat your oven to 425°F (220°C).
  9. Remove the chicken from the refrigerator and let it sit at room temperature for about 30 minutes.
  10. Quarter the onion and set it aside.
  11. In a large roasting pan, place the quartered onion in the center.
  12. Carefully place the marinated chicken on top of the onion and pour any remaining marinade over it.
  13. Pour the chicken broth into the bottom of the roasting pan.
  14. Roast the chicken for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  15. Baste the chicken with the pan juices halfway through roasting.
  16. Once done, remove the chicken from the oven and let it rest for 15-20 minutes.
  17. Transfer the chicken to a cutting board and carve into pieces.
  18. Arrange the carved chicken on a serving platter and drizzle with pan juices.
  19. Garnish with fresh herbs if desired.
  20. (Optional) To make a sauce, place the roasting pan on the stovetop over medium heat and scrape up any browned bits with a wooden spoon.
