  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Remove any wilted or damaged outer leaves from the cabbage. Cut the cabbage into 8 wedges, ensuring they are thick enough to hold their shape during roasting.
  3. In a large mixing bowl, combine the minced garlic, olive oil, salt, black pepper, and smoked paprika (if using). Mix until cohesive.
  4. Pour the garlic mixture over the cabbage wedges and toss gently with your hands to coat evenly.
  5. If using balsamic vinegar, drizzle it over the cabbage and toss again.
  6. Line a baking sheet with parchment paper or aluminum foil. Arrange the cabbage wedges in a single layer on the sheet.
  7. Roast in the preheated oven for 25-30 minutes, flipping the wedges halfway through for even browning.
  8. Keep an eye on the cabbage during the last few minutes; it should be tender and golden brown. For extra char, leave it in for an additional 5 minutes.
  9. Remove from the oven and let cool for a few minutes. Transfer to a serving platter and garnish with chopped parsley.
