Instructions

  1. In a medium-sized mixing bowl, combine the diced peaches, granulated sugar, ground cinnamon, lemon juice, and cornstarch.
  2. Gently toss everything together until the peaches are well coated. Let this mixture sit for about 10-15 minutes to allow the flavors to meld beautifully.
  3. Lay an egg roll wrapper on a clean, flat surface with one corner pointing towards you (like a diamond shape).
  4. Place about 2 tablespoons of the peach filling in the center of the wrapper, being careful not to overfill.
  5. To seal the egg roll, dip your finger in a little water and moisten the edges of the wrapper.
  6. Fold the bottom corner of the wrapper over the filling, then fold in the sides, and roll it up tightly towards the top corner. Press the edges to seal them well. Repeat with the remaining wrappers and filling.
