- 1 cup chocolate chips (for ganache)
Instructions
- Preheat the oven to 350°F (175°C). Grease two 9-inch round cake pans with butter and dust with flour.
- In a large mixing bowl, whisk together the dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the wet ingredients: eggs, milk, vegetable oil, and vanilla extract. Beat on medium speed for about 2 minutes until smooth.
- Carefully stir in the boiling water until well combined (the batter will be thin).
- Divide the batter evenly between the prepared cake pans.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
- In a mixing bowl, combine peanut butter, softened butter, powdered sugar, and vanilla extract.
- Beat on medium speed until smooth and creamy. If too thick, add milk a tablespoon at a time until desired consistency is reached.
- Place one cooled cake layer on a serving plate and spread a generous layer of peanut butter frosting on top.
- Place the second cake layer on top and gently press down.
- Spread frosting over the top and sides of the entire cake.
- Heat the heavy cream until just simmering, then pour over the chocolate chips in a bowl. Let sit for a few minutes, then stir until smooth.
- Pour the ganache over the top of the cake, allowing it to drip down the sides.
