  • 4 cod fillets (about 56 oz each)

  • Salt and pepper, to taste

  • 1 tbsp olive oil

  • 2 tbsp soy sauce (or tamari for gluten-free)

  • 1 tbsp honey or brown sugar

  • 1 tbsp rice vinegar

  • 1 tsp sesame oil

  • 1 tbsp fresh ginger, grated

  • 2 garlic cloves, minced

  • ½ tsp cornstarch + 1 tbsp water (optional, for thicker glaze)

  • Sesame seeds + chopped green onions, for garnish

  • Lime wedges (optional)


Instructions

  1. Season the Cod: Pat cod fillets dry with paper towels. Season both sides with salt and pepper.

  2. Make the Glaze: In a small saucepan or bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, grated ginger, and garlic. Bring to a low simmer over medium heat for 2–3 minutes. If a thicker glaze is desired, stir in a cornstarch slurry (½ tsp cornstarch + 1 tbsp water) and cook until glossy.

  3. Sear the Cod: Heat olive oil in a skillet over medium heat. Add cod and sear 3–4 minutes per side, until golden and flaky.

  4. Glaze & Serve: Pour the glaze over the cod in the final minute of cooking. Let it bubble slightly to caramelize. Plate with rice or veggies, and garnish with sesame seeds, green onions, and lime if using.

Notes

  • Cod should flake easily when cooked—don’t overdo it!

  • Swap cod for halibut, tilapia, or even salmon if needed.

  • Want more kick? Add a splash of sriracha or pinch of chili flakes.

  • Glaze can be made ahead and stored in the fridge up to 1 week.
