For the Tilapia:

  • 4 tilapia fillets

  • 1 tbsp olive oil

  • Salt and black pepper, to taste

  • 1/2 tsp paprika

For the Roasted Pepper Sauce:

  • 1 tbsp butter

  • 3 cloves garlic, minced

  • 1 jar (12 oz) roasted red peppers, drained

  • 1/2 cup heavy cream (or half-and-half)

  • 1/4 cup grated Parmesan cheese

  • Salt and pepper, to taste

  • Optional: pinch of crushed red pepper flakes

  • Fresh parsley or basil for garnish


Instructions

  • Season the tilapia fillets with salt, pepper, and paprika.

  • In a large skillet, heat olive oil over medium heat. Sear the tilapia for 3–4 minutes per side until golden and cooked through. Remove and set aside.

  • In the same skillet, melt the butter and sauté the garlic for 1 minute. Add the roasted red peppers and cook for another 2 minutes.

  • Transfer the mixture to a blender (or use an immersion blender). Add cream and Parmesan cheese, and blend until smooth.

  • Pour the sauce back into the skillet, season to taste, and simmer for 2–3 minutes to thicken.

  • Return the tilapia to the pan, spoon sauce over the fillets, and heat through for 1–2 minutes.

 

  • Garnish with chopped parsley or basil, and serve with your favorite side!

Notes

  • Don’t overcook the tilapia—it’s done when it flakes easily.

  • Add a touch of lemon juice to brighten the sauce.

  • For more heat, stir in extra red pepper flakes or a dash of cayenne.

  • Pairs beautifully with rice, quinoa, pasta, or roasted vegetables.
