Ingredients

Scale
  • 1 cup of unsalted butter (2 sticks)
  • 1 cup of packed brown sugar
  • 1 cup of granulated sugar
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of sea salt (plus extra for sprinkling)
  • 1 box of saltine crackers (about 40 crackers)
  • 2 cups of semi-sweet chocolate chips
  • 1/2 cup of chopped nuts (optional, pecans or walnuts recommended)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with aluminum foil or parchment paper.
  3. Arrange the saltine crackers in a single layer on the prepared baking sheet.
  4. In a medium saucepan, melt the butter over medium heat, stirring occasionally.
  5. Add the brown sugar to the melted butter and stir continuously until it comes to a boil (about 3-5 minutes).
  6. Once boiling, let it boil for 2-3 minutes without stirring. Remove from heat and stir in the vanilla extract and sea salt.
  7. Pour the caramel sauce evenly over the arranged saltine crackers, using a spatula to spread it out gently.
  8. Bake the crackers in the preheated oven for 5-7 minutes, watching closely to prevent burning.
  9. Remove the baking sheet from the oven and let it cool for about 5 minutes.
  10. Prepare the chocolate by microwaving the semi-sweet chocolate chips in 30-second intervals, stirring until smooth (1-2 minutes total).
  11. Pour the melted chocolate over the caramel-covered crackers and spread it evenly.
  12. If using nuts, sprinkle them over the melted chocolate while it’s still warm.
  13. Let the chocolate set at room temperature for about 30 minutes, or refrigerate for 15 minutes to speed up the process.
  14. Once set, cut the slab into bite-sized pieces using a sharp knife or pizza cutter.
  15. Sprinkle a little extra sea salt on top for added flavor.
  16. Transfer the bites to an airtight container. They can be stored at room temperature for up to a week or in the refrigerator for longer freshness.

Notes

  • For a variation, try using different types of chocolate (dark or white) or add a drizzle of caramel on top.
  • These bites make great gifts and are perfect for parties or as a sweet treat with coffee or tea.
