These breakfast roll-ups are a delightful combination of fluffy scrambled eggs, savory sausage, and melted cheddar cheese, all wrapped in warm tortillas. - 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1 cup cooked sausage, crumbled
- 6 large flour tortillas (10-inch size)
- 2 tablespoons butter (for cooking)

Instructions
- In a large mixing bowl, crack the 6 large eggs. Use a whisk to incorporate air into the eggs for fluffiness.
- Add 1/4 cup of milk to the eggs for creaminess.
- Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Adjust seasoning to taste.
- Whisk until well combined and slightly frothy. Set aside.
- In a skillet over medium heat, add crumbled sausage. If using pre-cooked sausage, just heat it through.
- Cook for about 5-7 minutes, stirring occasionally, until browned and fully cooked.
- Remove from skillet and place on a plate lined with paper towels to absorb excess grease. Set aside.
- In the same skillet, reduce heat to medium-low and add 1 tablespoon of butter. Melt and coat the skillet.
- Pour in the egg mixture and let sit for a few seconds before stirring.
- Gently stir the eggs, pushing from edges to center, until just set but still slightly soft (about 3-5 minutes).
- Remove from heat and stir in 1 cup of shredded cheddar cheese and the cooked sausage until cheese is melted and combined.
- Lay out 6 large flour tortillas on a clean surface.
- Evenly distribute the egg, sausage, and cheese mixture onto the center of each tortilla (about 1/3 to 1/2 cup of filling per tortilla).
- Fold in the sides of the tortilla and roll tightly from the bottom to the top, tucking in the sides as you roll.
- Repeat for all tortillas until assembled.
- In the same skillet (or a clean one), add the remaining 1 tablespoon of butter and heat over medium heat.
- Once melted and bubbling, place roll-ups seam side down in the skillet (in batches if necessary).
- Cook for about 2-3 minutes on each side until golden brown and crispy. Use tongs to flip carefully.
- Remove from skillet and place on a plate lined with paper towels to absorb excess butter.
- Slice each roll-up in half diagonally for presentation. Serve warm with optional salsa or hot sauce on the side for dipping.
