  • 1 pound ground beef (or turkey for a lighter option)
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 large head of romaine lettuce, chopped
  • 2 medium tomatoes, diced
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup guacamole
  • 1/2 cup sliced black olives (optional)
  • 1/2 cup salsa
  • 1 bag tortilla chips (for serving)

Instructions

  1. In a large skillet over medium heat, add the ground beef. Use a wooden spoon to break it apart as it cooks.
  2. Cook the beef until it’s browned and no longer pink, about 5-7 minutes. Stir occasionally for even cooking.
  3. Drain any excess fat from the skillet to keep the salad from becoming greasy.
  4. Add the taco seasoning and 2/3 cup of water to the beef. Stir well to combine.
  5. Bring to a simmer and cook for about 5 minutes, or until the sauce thickens, stirring occasionally.
  6. Remove from heat and set aside to cool slightly.
  7. While the beef cools, wash and chop the romaine lettuce. Use a salad spinner to remove excess water.
  8. Dice the tomatoes into small pieces, removing seeds if desired.
  9. Rinse and drain the black beans and corn.
  10. In a large serving bowl or trifle dish, layer the ingredients starting with the chopped romaine lettuce.
  11. Add the seasoned ground beef evenly over the lettuce.
  12. Layer the black beans over the beef, followed by the corn.
  13. Sprinkle the diced tomatoes over the corn.
  14. Add a layer of shredded cheddar cheese.
  15. Spoon the sour cream over the cheese, spreading gently.
  16. Add guacamole on top of the sour cream, and sprinkle sliced black olives if using.
  17. Drizzle salsa over the top.
  18. Serve the salad in the center of the table with tortilla chips on the side.
  19. Provide extra salsa, sour cream, and guacamole for customization.
  20. For a fun twist, serve in individual cups or bowls.
