  • 1/2 cup powdered sugar, plus extra for dusting
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup finely chopped nuts (walnuts or pecans)

Instructions

  1. Cream together the softened unsalted butter and 1/2 cup of powdered sugar using an electric mixer on medium speed for about 2-3 minutes until light and fluffy.
  2. Mix in 1 teaspoon of vanilla extract until well combined.
  3. In a separate bowl, whisk together 2 cups of all-purpose flour and 1/4 teaspoon of salt.
  4. Gradually add the flour mixture to the butter and sugar mixture in three parts, mixing on low speed until just combined after each addition.
  5. Fold in 1 cup of finely chopped nuts using a spatula until evenly distributed.
  6. Cover the bowl with plastic wrap and refrigerate for at least 1 hour.
  7. Preheat your oven to 350°F (175°C).
  8. Line two baking sheets with parchment paper.
  9. Scoop out about 1 tablespoon of dough and roll it into a ball. Place the balls about 2 inches apart on the prepared baking sheets.
  10. Bake for 12-15 minutes, or until the edges are lightly golden. The centers will look soft but will firm up as they cool.
  11. Let the cookies cool on the baking sheets for about 5 minutes before transferring them to a wire rack.
  12. Roll each cookie in powdered sugar until completely coated. For an extra festive touch, dust with more powdered sugar just before serving.

  • Store cookies in an airtight container at room temperature for up to a week.
  • Unbaked dough can be frozen; roll into balls, freeze until solid, then transfer to a freezer bag. Bake from frozen, adding a couple of extra minutes to the baking time.
