Ingredients
- Boneless, skinless chicken breasts or thighs
- Large, soft flour tortillas
- Rinsed and drained black beans
- Canned, frozen, or fresh corn kernels
- Shredded Monterey Jack, Colby Jack, or sharp cheddar cheese
- Crisp romaine lettuce, butter lettuce, or spring mix
- Diced ripe tomatoes or salsa
- Sliced or diced avocado
- Thinly sliced red onion
- Southwest ranch or chipotle mayo
- Chili powder

Instructions
- Prepare the Chicken: Season your boneless, skinless chicken breasts (or thighs) with chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Pan-fry, grill, or bake until cooked through. Once slightly cooled, shred or dice the chicken into bite-sized pieces.
- Gather and Prep Fillings: Rinse and drain the black beans thoroughly. If using frozen corn, thaw it completely. Dice your tomatoes and red onion. Slice or dice the avocado just before assembly. Shred your cheese and wash and chop your lettuce or greens. Whisk together your homemade Southwest ranch or chipotle mayo if making it from scratch.
- Warm the Tortillas (Optional, but Recommended): Warm the tortillas in a dry skillet over medium heat for about 15-20 seconds per side, or microwave them for about 15-20 seconds wrapped in a damp paper towel.
- Assemble Your Wrap: Lay one warm tortilla flat on a clean surface. Spread a generous layer of your chosen sauce (Southwest ranch or chipotle mayo) down the center of the tortilla, leaving a border around the edges.
- Layer the Fillings: Place a portion of your seasoned chicken over the sauce. Follow with a sprinkle of shredded cheese, a spoonful of black beans, corn, diced tomatoes, sliced red onion, and avocado, leaving room on the sides for folding.
- Fold the Wrap: Fold the two opposite sides of the tortilla inward over the fillings by about 1-2 inches. Starting from the bottom edge, tightly roll the tortilla upwards, tucking in the fillings as you go.
