  • 1 large loaf of sourdough bread
  • 1 pound of spaghetti
  • 4 tablespoons of olive oil
  • 4 cloves of garlic, minced
  • 1 teaspoon of red pepper flakes (optional)
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/2 cup of grated Parmesan cheese
  • 1/4 cup of fresh parsley, chopped
  • 1 cup of marinara sauce (store-bought or homemade)
  • 1 cup of shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut off the top of the sourdough bread to create a lid and set it aside.
  3. Hollow out the inside of the loaf, being careful not to break through the bottom or sides. Set the bread insides aside for later use.
  4. Brush the inside of the hollowed-out bread with 2 tablespoons of olive oil.
  5. Place the bread bowls on a baking sheet and bake for about 10 minutes, until golden.
  6. Boil a large pot of salted water and cook the spaghetti according to package instructions until al dente (about 8-10 minutes).
  7. Reserve 1 cup of pasta water, then drain the spaghetti and set aside in a large mixing bowl.
  8. In a small saucepan, heat the remaining 2 tablespoons of olive oil over medium heat.
  9. Add minced garlic and red pepper flakes (if using) and sauté for 1-2 minutes until fragrant.
  10. Pour the garlic oil over the cooked spaghetti and toss to coat.
  11. Add salt, black pepper, grated Parmesan cheese, and chopped parsley to the spaghetti. Toss until well combined, adding reserved pasta water as needed for desired consistency.
  12. Fill the toasted bread bowls with the garlic spaghetti mixture.
  13. Spoon marinara sauce over the filled spaghetti in each bread bowl.
  14. Sprinkle shredded mozzarella cheese generously over the marinara sauce.
  15. Return the filled bread bowls to the oven and bake for an additional 15-20 minutes, until the cheese is melted and bubbly.
  16. For an extra crispy top, broil for the last 2-3 minutes, watching closely to prevent burning.
  17. Let the garlic bread bowls cool for a few minutes before serving.
  18. Serve warm, garnished with additional parsley and Parmesan cheese if desired.
  19. To eat, break off pieces of the bread bowl and scoop up the spaghetti and sauce.
