  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1 large egg
  • 1 teaspoon almond extract
  • 1/2 cup chopped pecans or walnuts (optional)
  • Vanilla ice cream or whipped cream for serving (optional)

Instructions

  1. Wash the peaches thoroughly under cool running water.
  2. Cut the peaches in half and remove the pits.
  3. Slice the peaches into thin wedges, about 1/4-inch thick.
  4. In a large mixing bowl, combine the sliced peaches with 1/2 cup of granulated sugar, lemon juice, vanilla extract, ground cinnamon, and salt. Toss gently until well coated and let sit for 15-20 minutes.
  5. Preheat your oven to 350°F (175°C).
  6. In a separate bowl, whisk together the flour, baking powder, baking soda, and the remaining 1/2 cup of granulated sugar.
  7. In another bowl, combine the melted butter, milk, egg, and almond extract. Whisk until well blended.
  8. Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Fold in nuts if using.
  9. Grease a 9×13-inch baking dish with butter or non-stick spray.
  10. Pour the batter into the prepared baking dish, spreading it evenly.
  11. Spoon the marinated peach mixture over the batter, distributing evenly and pouring any juices on top.
  12. Gently press the peaches down into the batter with a spatula.
