- 4 ripe peaches, pitted and sliced
- 1 cup granulated sugar, divided
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon

- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup unsalted butter, melted
- 1/2 cup milk
- 1 large egg
- 1 teaspoon almond extract
- 1/2 cup chopped pecans or walnuts (optional)

Instructions
- Wash the peaches thoroughly under cool running water.
- Cut the peaches in half and remove the pits.
- Slice the peaches into thin wedges, about 1/4-inch thick.
- In a large mixing bowl, combine the sliced peaches with 1/2 cup of granulated sugar, lemon juice, vanilla extract, ground cinnamon, and salt. Toss gently until well coated and let sit for 15-20 minutes.
- Preheat your oven to 350°F (175°C).
- In a separate bowl, whisk together the flour, baking powder, baking soda, and the remaining 1/2 cup of granulated sugar.
- In another bowl, combine the melted butter, milk, egg, and almond extract. Whisk until well blended.
- Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Fold in nuts if using.
- Grease a 9×13-inch baking dish with butter or non-stick spray.
- Pour the batter into the prepared baking dish, spreading it evenly.
- Spoon the marinated peach mixture over the batter, distributing evenly and pouring any juices on top.
- Gently press the peaches down into the batter with a spatula.
- Bake in the preheated oven for 35-40 minutes, or until golden brown and a toothpick inserted comes out clean.
- If the top browns too quickly, cover loosely with aluminum foil.
- Let cool in the pan for 10-15 minutes before cutting.
- Cut into squares or rectangles and serve warm or at room temperature.

Notes
