Ingredients

  • Hawaiian Sweet Rolls
  • Cheese Slices (American cheese, mild cheddar, Monterey Jack, or colby-jack blend)
  • Unsalted Butter
  • Thinly Sliced Deli Meat (ham or turkey)
  • Crushed Pineapple (well-drained)
  • Jalapeño Slices (fresh or pickled)
  • Crispy Beef Bacon Bits (pre-cooked, finely crumbled)
  • Dijon mustard or sriracha mayo (optional)

Instructions

  1. Prepare Your Rolls: Keep the entire slab of Hawaiian rolls connected. Using a serrated knife, carefully slice the whole block horizontally, separating it into a top and bottom half.
  2. Butter Up: Melt unsalted butter. Using a pastry brush, generously butter the cut sides of both the top and bottom halves of the rolls.
  3. Layer the Cheese (and Fillings!): Place the bottom half of the rolls, butter-side down, into a large, cold non-stick skillet. Arrange cheese slices over the bottom half, cutting them to fit. If adding optional fillings (deli meat, pineapple, beef bacon), layer them on top of the first cheese layer, then add another layer of cheese.
  4. Cap it Off: Carefully place the top half of the Hawaiian rolls (butter-side up) over the layered bottom half. Press down gently.
  5. Grill to Perfection: Turn the skillet heat to medium-low. Once warm, carefully transfer the assembled slab into it. Cover the skillet with a lid. Cook for 3-5 minutes, or until the bottom is golden brown and cheese begins to melt.
  6. Flip and Finish: Using a large spatula, carefully flip the entire slab. Cover again and cook for another 3-5 minutes, or until the second side is golden brown and the cheese is fully melted and gooey.
  7. Separate and Serve: Remove the slab from the skillet. Slice along the existing lines to separate into individual mini grilled cheeses. Serve immediately while hot and fresh.
