- 1 cup Granulated Sugar
- 1 tablespoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1 cup Shredded Coconut (reserve 2 tablespoons for topping)
- 1 cup Whole Milk (or buttermilk/plant-based milk)
- 1 Large Egg (room temperature)
- 1/2 cup Melted Unsalted Butter or Neutral Oil
- 1 teaspoon Vanilla Extract
- 1 cup Nutella
Instructions
- Preheat your oven to 400°F (200°C) and line a standard 12-cup muffin tin with paper liners. Lightly coat the inside of the liners with non-stick spray.
- In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Add most of your shredded coconut and whisk until well combined.
- In a separate medium bowl, whisk together the whole milk, large egg, melted unsalted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients. Gently fold them together until just combined, being careful not to overmix.
- Divide the batter evenly among the 12 prepared muffin liners, filling each about two-thirds full.
- Dollop about a teaspoon of Nutella over the top of each muffin and swirl it into the batter with a toothpick or skewer.
- If you reserved some shredded coconut, sprinkle it over the top of each muffin before baking.
- Bake for 5 minutes at 400°F (200°C), then reduce the temperature to 375°F (190°C) and continue to bake for another 13-17 minutes, or until golden brown and a toothpick comes out clean.
- Remove the muffin tin from the oven and let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
