Instructions

- Add eggs and vanilla extract, mixing on low speed until well combined and fluffy.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add the dry mixture to the wet ingredients in three parts, mixing on low speed until just combined.
- Fold in chocolate chips and/or chopped peanuts if desired.
- Line a baking sheet with parchment paper.
- Scoop out portions of dough (about 1.5 inches in diameter) and roll into balls. Place on the baking sheet, leaving 2 inches of space between each.
- Use a fork to press down on each dough ball, creating a crisscross pattern.
- Bake for 10-12 minutes until edges are set but centers look slightly underbaked.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Move cookies to a wire rack to cool completely.
