Instructions
- Preheat the oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- In a large bowl, combine 1 cup of rolled oats, 1 cup of whole wheat flour, 1 teaspoon of cinnamon, and a pinch of salt. Stir until well mixed.
- In another bowl, whisk together 1 cup of grated apple, 1/2 cup of nut butter, 1/3 cup of honey, and 1 egg (or flaxseed mixture) until well combined.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Fold in 1/2 cup of chopped nuts or raisins if desired.
- Using a tablespoon or cookie scoop, drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
