Instructions
- Start by washing and drying your greens thoroughly. Tear them into bite-sized pieces and place them in a large salad bowl.
- Dice the bell peppers, shred the carrots, and slice the cucumbers. Add all the vegetables to the bowl with the greens.
- If using grilled chicken or tofu, slice it into thin strips. For the beef alternative, grill the beef until cooked to your liking, then slice it thinly and add it to the salad.
- In a small bowl, mix together 3 tablespoons of peanut butter, 2 tablespoons of soy sauce, the juice of one lime, and 1 tablespoon of honey. Whisk until smooth. If the dressing is too thick, add a little warm water to reach your desired consistency.
- Drizzle the dressing over the salad and toss everything together gently until well combined. Be sure to coat all the ingredients evenly with the dressing.
- Finish off the salad by sprinkling chopped cilantro, sliced green onions, and sesame seeds on top for added flavor and texture.
