Ingredients

  • Whole wheat or gluten-free lasagna sheets
  • Fresh pumpkin or canned pumpkin puree
  • Fresh spinach or frozen spinach (thawed and drained)
  • Ricotta cheese (or cottage cheese as a substitute)
  • Shredded mozzarella cheese (smoked mozzarella optional)
  • Grated Parmesan cheese (or nutritional yeast as a dairy-free substitute)
  • Chopped onion
  • Minced garlic
  • Fresh basil
  • Oregano
  • Olive oil (or avocado oil as a substitute)
  • Vegetable broth

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. If using fresh pumpkin, peel, seed, and cut it into small cubes. Roast them in the oven with a drizzle of olive oil for about 20-25 minutes until tender.
  3. In a skillet, heat some olive oil over medium heat. Add chopped onions and minced garlic, cooking until translucent and fragrant.
  4. Toss in your fresh (or thawed) spinach and cook until wilted. Season with salt, pepper, and herbs.
  5. In a bowl, combine the ricotta cheese with a bit of salt, pepper, and grated Parmesan.
  6. In a baking dish, spread a thin layer of vegetable broth on the bottom. Place a layer of pasta sheets, followed by half of the roasted pumpkin, a layer of the spinach mixture, and dollops of the ricotta mix. Repeat this process, adding another layer of pasta and topping with remaining ingredients.
  7. Finish with a final layer of pasta sheets, a generous spread of mozzarella cheese, and a sprinkle of Parmesan on top.
  8. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes until bubbly and golden.
  9. Once out of the oven, let the lasagna cool for about 10-15 minutes before slicing and serving.
