Ingredients
- Whole wheat or gluten-free lasagna sheets
- Fresh pumpkin or canned pumpkin puree
- Fresh spinach or frozen spinach (thawed and drained)

- Shredded mozzarella cheese (smoked mozzarella optional)
- Grated Parmesan cheese (or nutritional yeast as a dairy-free substitute)
- Chopped onion
- Minced garlic
- Fresh basil
- Oregano
- Olive oil (or avocado oil as a substitute)
- Vegetable broth
Instructions
- Preheat the oven to 180°C (350°F).
- If using fresh pumpkin, peel, seed, and cut it into small cubes. Roast them in the oven with a drizzle of olive oil for about 20-25 minutes until tender.
- In a skillet, heat some olive oil over medium heat. Add chopped onions and minced garlic, cooking until translucent and fragrant.
- Toss in your fresh (or thawed) spinach and cook until wilted. Season with salt, pepper, and herbs.
- In a bowl, combine the ricotta cheese with a bit of salt, pepper, and grated Parmesan.
- In a baking dish, spread a thin layer of vegetable broth on the bottom. Place a layer of pasta sheets, followed by half of the roasted pumpkin, a layer of the spinach mixture, and dollops of the ricotta mix. Repeat this process, adding another layer of pasta and topping with remaining ingredients.
- Finish with a final layer of pasta sheets, a generous spread of mozzarella cheese, and a sprinkle of Parmesan on top.
- Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes until bubbly and golden.
- Once out of the oven, let the lasagna cool for about 10-15 minutes before slicing and serving.
