  • Fajita seasoning (store-bought or homemade: chili powder, ground cumin, smoked paprika, garlic powder, onion powder, dried oregano, salt, cayenne pepper)
  • 1/2 cup full-fat sour cream
  • Juice of 1 fresh lime
  • Pinch of salt
  • 12 tablespoons water or milk (for lime crema)
  • 12 tablespoons olive oil or avocado oil (for cooking)
  • Fresh cilantro (for garnish)

Instructions

  1. In a small bowl, combine 1/2 cup sour cream, the juice of one fresh lime, and a pinch of salt. Whisk vigorously until smooth. If the crema is too thick to drizzle, add a tablespoon or two of water or milk until it reaches your desired consistency. Taste and adjust seasonings as needed. Cover and refrigerate while you prepare the rest of the meal.
  2. Pat your 1-1.5 lbs of flank or skirt steak thoroughly dry with paper towels. Slice the steak against the grain into thin strips, about 1/4-inch thick. In a medium bowl, toss the steak strips with 1-2 tablespoons of olive oil and 2 tablespoons of your fajita seasoning, ensuring every piece is well coated.
  3. Bring a large pot of generously salted water to a rolling boil. Add your chosen noodles (approximately 8 oz) and cook according to package directions until they are al dente. Drain the noodles well and set them aside.
  4. Heat 1 tablespoon of olive oil in a large skillet or cast-iron pan over medium-high heat until it's shimmering. Add half of the seasoned steak strips in a single layer. Cook for 2-3 minutes per side, or until beautifully seared and cooked to your desired doneness. Transfer the cooked steak to a plate and loosely tent with foil to rest. Repeat with the remaining steak.
  5. Add another tablespoon of olive oil to the same skillet. Add your sliced bell peppers and the sliced onion.
