Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together 1 cup of unsalted butter, 1 cup of brown sugar, and 1/2 cup of granulated sugar until light and fluffy. This should take about 3-4 minutes.
- Beat in 2 large eggs, one at a time, mixing well after each addition. Don’t forget to scrape down the sides of the bowl!
- In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and a pinch of salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
- Cover the dough with plastic wrap and chill in the refrigerator for at least 30 minutes.
- Once chilled, scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, but they will set as they cool.
- While the cookies are still warm, make an indentation in the center of each cookie using the back of a teaspoon. Fill each indentation with about 1 teaspoon of caramel sauce.
- Allow the cookies to cool completely. Meanwhile, melt 1 cup of chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each until smooth. Drizzle or dip the cooled cookies into the melted chocolate to coat.
