- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade)
- 1 cup beef broth
- 1 can (15 oz) refried beans
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup sour cream
- 1 cup salsa
- 1 jalapeño, sliced (optional)
- Fresh cilantro, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Once hot, add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.
- Add the minced garlic to the skillet and cook for an additional 1 minute, stirring frequently to prevent burning.
- Next, add the ground beef to the skillet. Use a wooden spoon to break it up into smaller pieces. Cook until the beef is browned and no longer pink, about 5-7 minutes.
- Once the beef is cooked, drain any excess fat from the skillet to avoid a greasy burrito.
- Sprinkle the taco seasoning over the beef mixture and stir to combine. Pour in the beef broth and bring the mixture to a simmer. Let it cook for about 5 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- While the beef is simmering, take another small saucepan and heat the refried beans over low heat. Stir occasionally to prevent sticking.
- If the beans are too thick, you can add a splash of water or beef broth to reach your desired consistency. Keep them warm until you’re ready to assemble the burritos.
- Once the beef filling and refried beans are ready, lay a large flour tortilla flat on a clean surface.
- Spread about ¼ cup of refried beans in the center of the tortilla, leaving some space at the edges.
- Add a generous scoop of the beef mixture on top of the beans, about ½ cup should do.
- Sprinkle a mix of shredded cheddar and Monterey Jack cheese over the beef.
- If desired, add a few slices of jalapeño for heat and a dollop of sour cream for creaminess.
- Fold the sides of the tortilla inwards, then roll it up from the bottom to the top, ensuring all the filling is tucked inside. Roll tightly to prevent any filling from escaping.
- Repeat this process for the remaining tortillas and filling.
- Preheat your oven to 350°F (175°C). Lightly grease a baking dish with cooking spray or olive oil.
- Place the assembled burritos seam-side down in the greased baking dish.
- Pour salsa over the top of the burritos, ensuring they are evenly covered.
- Sprinkle any remaining cheese on top of the salsa.
- Cover the baking dish with aluminum foil to prevent drying out. Bake in the preheated oven for 20 minutes.
- After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
- Once the burritos are out of the oven, let them cool slightly before serving. Garnish with fresh cilantro and serve with additional sour cream and salsa on the side.
