- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 bag (30 oz) frozen hash browns, thawed
- 1 cup shredded mozzarella cheese
- 1/2 cup green onions, chopped (optional, for garnish)
- Cooking spray or olive oil for greasing the baking dish
Instructions
- In a large skillet over medium heat, add the ground beef. Use a wooden spoon to break it apart as it cooks.
- Once the beef starts to brown, add the diced onion and minced garlic. Stir and cook until the onion is translucent, about 5 minutes.
- Season with salt, black pepper, and paprika. Stir well and cook for another 2-3 minutes.
- Remove from heat and set aside to cool slightly.
- In a large mixing bowl, combine the cream of mushroom soup and sour cream. Stir until smooth.
- Add the shredded cheddar cheese and stir until evenly distributed.
- Fold in the thawed hash browns until well coated.
- Gently fold in the cooked beef mixture until combined, being careful not to mash the hash browns.
- Preheat your oven to 350°F (175°C).
- Grease a 9×13 inch baking dish with cooking spray or olive oil.
- Pour the beef and hash brown mixture into the prepared dish and spread evenly.
- Sprinkle the shredded mozzarella cheese over the top.
- Cover the baking dish with aluminum foil.
- Bake in the preheated oven for 30 minutes.
- Remove the foil and continue baking for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
- Let cool for about 10 minutes before serving.
- Cut into squares for serving.
- Garnish with chopped green onions if desired.
- Serve hot and enjoy!
Notes
- This casserole can be made ahead of time and stored in the refrigerator before baking. Just add an extra 10-15 minutes to the baking time if baking from cold.
