  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 bag (30 oz) frozen hash browns, thawed
  • 1 cup shredded mozzarella cheese
  • 1/2 cup green onions, chopped (optional, for garnish)
  • Cooking spray or olive oil for greasing the baking dish

Instructions

  1. In a large skillet over medium heat, add the ground beef. Use a wooden spoon to break it apart as it cooks.
  2. Once the beef starts to brown, add the diced onion and minced garlic. Stir and cook until the onion is translucent, about 5 minutes.
  3. Season with salt, black pepper, and paprika. Stir well and cook for another 2-3 minutes.
  4. Remove from heat and set aside to cool slightly.
  5. In a large mixing bowl, combine the cream of mushroom soup and sour cream. Stir until smooth.
  6. Add the shredded cheddar cheese and stir until evenly distributed.
  7. Fold in the thawed hash browns until well coated.
  8. Gently fold in the cooked beef mixture until combined, being careful not to mash the hash browns.
  9. Preheat your oven to 350°F (175°C).
  10. Grease a 9×13 inch baking dish with cooking spray or olive oil.
  11. Pour the beef and hash brown mixture into the prepared dish and spread evenly.
  12. Sprinkle the shredded mozzarella cheese over the top.
  13. Cover the baking dish with aluminum foil.
  14. Bake in the preheated oven for 30 minutes.
  15. Remove the foil and continue baking for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
  16. Let cool for about 10 minutes before serving.
  17. Cut into squares for serving.
  18. Garnish with chopped green onions if desired.
