Ingredients
Scale
- 3 average-sized zucchini
- 1 teaspoon salt (to taste)
- 1 teaspoon black pepper (to taste)
- 1 tablespoon Italian spice mix
- 1/2 cup flour
- 2 large eggs
- 1 cup breadcrumb mix (panko or Italian style)
- 1/3 cup grated Parmesan cheese
- 2 tablespoons oil spray
Instructions
- Begin by preheating your air fryer to 400°F (200°C) for about 5 minutes.
- While the air fryer is preheating, wash and dry the zucchinis thoroughly. Cut each zucchini into fry-shaped sticks, about 1/4 inch thick.
- In a medium bowl, combine the flour, salt, pepper, and Italian spice mix.
- In another bowl, beat the two large eggs until well mixed.
- In a third bowl, mix the panko breadcrumbs with the grated Parmesan cheese.
- Coat the zucchini fries: dredge each fry in the flour mixture, then dip it into the egg wash.
- Roll the zucchini in the breadcrumb and Parmesan mixture, pressing gently to ensure the coating sticks well.
- Once all the fries are coated, spray the air fryer basket lightly with oil spray.
- Place the zucchini fries in the air fryer basket in a single layer, ensuring they are not overcrowded.
- Cook the fries for 8-9 minutes, shaking the basket halfway through.
- Once cooked, carefully remove the fries from the air fryer and let them cool for a minute before serving.
