- 16 oz raw medium shrimp (thawed and drained)
- 1/2 red bell pepper (cut into strips, can do part red and green)
- 1/4 cup creamy ranch dressing (I used Hidden Valley)
- 1 Tbsp cherry pepper spread
- 3 Tbsp parmesan cheese
- 3 Tbsp Olive Garden dressing
- 2 Tbsp cornstarch
- 2 Tbsp ground cornmeal
- 3/4 cup all-purpose flour
- 1/2 Tbsp seasoned salt (I used Lawry's seasoned salt)
- 1/2 Tbsp garlic salt (Lawry's brand)
- 1 tsp lemon pepper
- 2 tsp paprika
- 1 Tbsp dried parsley
Instructions
- Start by making the spicy ranch: In a bowl, combine 1/4 cup of creamy ranch dressing, 1 Tbsp cherry pepper spread, and 3 Tbsp parmesan cheese. Mix well, cover, and store in the fridge while you prepare the shrimp.
- In a medium bowl, combine the dry breading ingredients: 2 Tbsp cornstarch, 2 Tbsp ground cornmeal, 3/4 cup all-purpose flour, 1/2 Tbsp seasoned salt, 1/2 Tbsp garlic salt, 1 tsp lemon pepper, 2 tsp paprika, and 1 Tbsp dried parsley. Whisk thoroughly to ensure an even distribution of spices.
- Once mixed, reserve 1/2 cup of this dry mixture for the wet batter. In a small bowl, whisk together the reserved dry mixture with 1/2 cup of cold water until smooth. This is your wet batter.
- Heat your oil in a deep fryer or heavy pot to 350°F (175°C).
- Dip the shrimp and bell pepper strips into the wet batter, letting excess drip off, then coat them in the dry breading.
- Fry the shrimp in small batches for 2-3 minutes, or until they float to the top and turn a golden brown.
- Fry the bell pepper strips last for about 1 minute, just until they’re tender and lightly golden.
- Using a slotted spoon, transfer the fried shrimp and peppers onto a plate lined with paper towels to drain excess oil.
- Serve the Shrimp Fritto Misto hot with your homemade spicy ranch or marinara sauce for dipping.
