Description

These Pineapple Cookies are a delightful blend of soft, chewy texture and bright bursts of pineapple flavor. Perfect for any occasion, they bring smiles and warmth to your table.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup butter, softened
  • 1/2 cup crushed pineapple, drained
  • 1/4 cup shredded coconut (optional)
  • 1 egg
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Line your slow cooker with parchment paper, ensuring it covers the bottom and sides.
  2. In a large mixing bowl, cream together the softened butter and sugar using a hand mixer or stand mixer on medium speed for about 3-4 minutes, until the mixture is light and fluffy.
  3. Add 1 egg to the creamed butter and sugar, beating until fully combined and smooth.
  4. In another bowl, whisk together 1 cup of all-purpose flour, 1/2 teaspoon of baking powder, and 1/4 teaspoon of salt.
  5. Gradually add the dry mixture to the wet ingredients, mixing on low speed just until combined.
  6. Gently fold in the 1/2 cup of drained crushed pineapple and the optional 1/4 cup of shredded coconut until just combined.
  7. Using a cookie scoop or spoon, drop the dough into the slow cooker, ensuring there’s space between each cookie (about 2 inches).
  8. Cover the slow cooker with its lid and cook on low for about 2 hours. Check at the 1.5-hour mark; the edges should be golden brown, and the center should look set but soft.
  9. Once done, allow the cookies to cool in the slow cooker for about 5 minutes, then transfer to a wire rack to cool completely.
