- Add 1 egg to the creamed butter and sugar, beating until fully combined and smooth.
- In another bowl, whisk together 1 cup of all-purpose flour, 1/2 teaspoon of baking powder, and 1/4 teaspoon of salt.
- Gradually add the dry mixture to the wet ingredients, mixing on low speed just until combined.
- Gently fold in the 1/2 cup of drained crushed pineapple and the optional 1/4 cup of shredded coconut until just combined.
- Using a cookie scoop or spoon, drop the dough into the slow cooker, ensuring there’s space between each cookie (about 2 inches).
- Cover the slow cooker with its lid and cook on low for about 2 hours. Check at the 1.5-hour mark; the edges should be golden brown, and the center should look set but soft.
- Once done, allow the cookies to cool in the slow cooker for about 5 minutes, then transfer to a wire rack to cool completely.
