  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips (for coating)
  • Extra chopped pecans (for garnish)

Instructions

  1. Start by gathering all your ingredients on the counter. It’s always easier to have everything in one place before you begin.
  2. In a large mixing bowl, combine the finely chopped pecans, graham cracker crumbs, powdered sugar, cocoa powder, and salt. Use a whisk to mix these dry ingredients together until they are well combined.
  3. In a separate bowl, cream together the softened butter, maple syrup, and vanilla extract until smooth and creamy.
  4. Pour the butter mixture into the bowl with the dry ingredients. Using a spatula, fold the wet ingredients into the dry ingredients until everything is well combined. If it feels too dry, add more maple syrup, one teaspoon at a time.
  5. Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
  6. After chilling, scoop out about a tablespoon of the mixture and roll it into a ball. Place the rolled balls on a parchment-lined baking sheet, leaving space between each.
  7. Refrigerate the rolled balls for another 30 minutes.
  8. While the balls are chilling, melt the semi-sweet chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between.
  9. Dip each chilled ball into the melted chocolate, allowing excess chocolate to drip off before placing it back on the baking sheet. Garnish with extra chopped pecans if desired.
  10. Once all the balls are coated, refrigerate for about 30 minutes to allow the chocolate to set completely.
