Ingredients
Scale
- 1 cup pecans, finely chopped
- 1 cup graham cracker crumbs
- 1/2 cup powdered sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 cup unsalted butter, softened
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips (for coating)
- Extra chopped pecans (for garnish)
Instructions
- Start by gathering all your ingredients on the counter. It’s always easier to have everything in one place before you begin.
- In a large mixing bowl, combine the finely chopped pecans, graham cracker crumbs, powdered sugar, cocoa powder, and salt. Use a whisk to mix these dry ingredients together until they are well combined.
- In a separate bowl, cream together the softened butter, maple syrup, and vanilla extract until smooth and creamy.
- Pour the butter mixture into the bowl with the dry ingredients. Using a spatula, fold the wet ingredients into the dry ingredients until everything is well combined. If it feels too dry, add more maple syrup, one teaspoon at a time.
- Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
- After chilling, scoop out about a tablespoon of the mixture and roll it into a ball. Place the rolled balls on a parchment-lined baking sheet, leaving space between each.
- Refrigerate the rolled balls for another 30 minutes.
- While the balls are chilling, melt the semi-sweet chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between.
- Dip each chilled ball into the melted chocolate, allowing excess chocolate to drip off before placing it back on the baking sheet. Garnish with extra chopped pecans if desired.
- Once all the balls are coated, refrigerate for about 30 minutes to allow the chocolate to set completely.
Notes
- Ensure the chocolate is not overheated to prevent it from seizing.
- You can substitute the pecans with other nuts if desired.
- Store the finished pecan pie balls in an airtight container in the refrigerator for up to a week.
