Ingredients
Scale
- 1 lb (450 g) boneless, skinless chicken thighs (or breasts), cut into 1-inch cubes
- 1/4 cup (60 ml) honey
- 1/4 cup (60 ml) soy sauce
- 2 tablespoons (30 ml) apple cider vinegar (or rice vinegar)
- 4 cloves garlic, minced
- 1 tablespoon (15 g) fresh ginger, grated
- 1 teaspoon chili flakes (adjust based on spice preference)
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- Wooden or metal skewers (if using wooden skewers, soak in water for at least 30 minutes beforehand)
- Optional: vegetables for skewering, such as bell peppers, onions, or zucchini, cut into 1-inch pieces
- Chopped fresh cilantro or green onions for garnish
- Sesame seeds for garnish
Instructions
- Start by preparing the marinade: in a large bowl, combine the honey, soy sauce, apple cider vinegar, minced garlic, grated ginger, chili flakes, smoked paprika, black pepper, and salt. Whisk until well blended (about 1 minute) to ensure all ingredients are incorporated.
- Add the cubed chicken to the marinade, stirring to coat evenly. Cover the bowl and let it marinate in the refrigerator for at least 15 minutes; for best results, marinate for 1-2 hours.
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Preheat your grill or broiler to medium-high heat (around 400°F/200°C). If using a grill, lightly oil the grates to prevent sticking.
- Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking. If you’re adding vegetables, intersperse them between the chicken pieces.
- Place the skewers on the grill or under the broiler. Cook for about 10-12 minutes, turning occasionally until the chicken is golden brown and cooked through. The internal temperature should reach 165°F (75°C).
- Once cooked, remove the skewers from heat and let them rest for 5 minutes.
- Garnish with chopped cilantro or green onions and sprinkle sesame seeds on top before serving.
