  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 (1 oz) packet ranch dressing mix
  • 1 (15 oz) can chili beans, drained
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (4 oz) can diced green chilies, undrained
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes (fresh or canned, drained)
  • 1/2 cup sliced green onions
  • 1/2 cup diced bell pepper (any color)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Tortilla chips, for serving

Instructions

  1. In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Using a hand mixer or a whisk, blend these ingredients together until smooth and creamy. This will be the base of your dip, so make sure there are no lumps.
  2. Once the base is smooth, add the ranch dressing mix. This will give your dip that signature flavor. Mix well until the ranch is fully incorporated into the creamy base.
  3. Next, it’s time to add the beans. Start with the chili beans, followed by the black beans. Make sure to drain and rinse the black beans to remove excess sodium and any canning liquid. Gently fold the beans into the creamy mixture using a spatula, being careful not to mash them.
  4. Now, add the corn and diced green chilies. The corn adds a nice sweetness, while the green chilies bring a bit of heat. Again, fold these ingredients into the mixture until evenly distributed.
  5. Next, add the diced tomatoes, sliced green onions, and diced bell pepper. These fresh ingredients will add color and crunch to your dip. Mix everything together gently, ensuring that all the ingredients are well combined.
  6. Now it’s time to season the dip. Sprinkle in the garlic powder and cumin, and add salt and pepper to taste. I usually start with about 1/2 teaspoon of salt and a pinch of pepper, then adjust according to my preference. Mix well to ensure the seasonings are evenly distributed throughout the dip.
  7. Once everything is mixed, taste the dip. This is your chance to adjust the flavors. If you want more heat, consider adding a dash of hot sauce or some diced jalapeños. If you prefer a creamier texture, you can add a bit more sour cream or mayonnaise.
  8. Transfer the dip to a serving dish or a large bowl. Cover it with plastic wrap or a lid and refrigerate for at least 1 hour. This chilling time allows the flavors to meld together beautifully, making the dip even more delicious.
  9. If you have time, letting it chill for a few hours or even overnight is ideal. The longer it sits, the better the flavors will develop!
  10. When you’re ready to serve, remove the dip from the refrigerator. Give it a good stir to bring everything back together, as some ingredients may have settled during chilling.
  11. Top the dip with a sprinkle of extra shredded cheddar cheese and a few more sliced green onions for garnish. This adds a nice visual appeal and a little extra flavor on top.
  12. Serve the Texas Trash Dip with a generous bowl of tortilla chips. I love using a variety of chips, like regular corn chips, blue corn chips, or even some spicy tortilla chips for an extra kick!

Notes

  • If you have any leftovers (which is rare because this recipe is so delicious!), store them in an airtight container in the refrigerator. The dip will keep well for about 3-4 days. Just give it a good stir before serving again.
