Instructions
- Start by preparing your ingredients. Juice the lemons until you have 1/2 cup of fresh lemon juice, and zest one lemon to get 1 teaspoon of zest. This should take about 5-7 minutes. Fresh ingredients lead to better flavor, so avoid using pre-packaged lemon juice.
- In a mixing bowl, combine the 2 cups of Greek yogurt, 1/2 cup of lemon juice, 1/2 cup of granulated sugar, 1 teaspoon of lemon zest, 1/4 teaspoon of salt, and 1/2 teaspoon of pure vanilla extract (if using). Use a whisk or a hand mixer to blend until smooth and creamy, which should take about 2-3 minutes. Make sure there are no lumps in the yogurt for a velvety texture.
- Once blended, taste the mixture and adjust the sweetness as needed. If it’s too tart, add a little more sugar, mixing thoroughly until dissolved. This step is critical because it sets the tone for your popsicles and ensures they’re just right for your taste.
- Pour the mixture into popsicle molds, leaving a little space at the top for expansion. This should fill about 6-8 molds depending on their size. Use a spatula to scrape out every last bit of that delicious mixture!
- Insert sticks into the molds and place them in the freezer. Freeze for at least 4-6 hours, or until completely solid. To test for doneness, gently pull on a stick; if it comes out without resistance, they’re ready!
- When ready to serve, run warm water over the outside of the popsicle molds for about 10-15 seconds to help release the popsicles. Be careful not to leave them in the water too long, as you don’t want them to melt. Gently pull the popsicles out and enjoy immediately.
